- 2 cups sushi rice
- 4 nori sheets
- 1 ripe avocado, sliced
- 1 medium cucumber, julienned
- 1 medium carrot, julienned
- 6 oz crab meat or imitation crab
- ¼ cup low-sodium soy sauce
- 1 tsp wasabi paste (optional)
- Pickled ginger (for serving)
Instructions
- Rinse sushi rice under cold water until clear, then cook according to package instructions. Allow it to cool.
- While the rice cools, julienne cucumber and carrot, and slice avocado into strips.
- On a bamboo mat, lay a nori sheet shiny side down. Spread about half a cup of sushi rice evenly over the nori, leaving an inch at the top edge.
- Place avocado, cucumber, carrot, and crab along the bottom third of the rice-covered nori.
- Roll tightly away from yourself using the mat for support. Press gently to keep fillings snug.
- Slice each roll into bite-sized pieces with a knife dipped in water. Serve with soy sauce, wasabi paste, and pickled ginger.
