  • 2 cans (15 oz each) cannellini or navy beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 fresh lemons (zest and juice)
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 tablespoon fresh thyme or parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • Salt & pepper to taste
