  • 1 lb fresh Rock Cod fillets
  • 2 tbsp fresh grated Ginger
  • 1/4 cup low-sodium Soy Sauce
  • 2 tbsp Brown Sugar (or coconut sugar)
  • 3 Garlic Cloves, minced
  • 2 tbsp Lime Juice
  • 1 tsp Sesame Oil
  • 2 Green Onions, finely chopped (for garnish)

Instructions

  1. In a mixing bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, lime juice, and sesame oil until smooth.
  2. Place the rock cod fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C) or prepare your grill over medium heat.
  4. Remove the fish from the marinade (reserve the marinade) and place it on a parchment-lined baking sheet or directly on the grill grates.
  5. Bake or grill for about 10-12 minutes until the fish flakes easily with a fork, brushing with reserved marinade halfway through cooking.
  6. Garnish with chopped green onions and serve immediately with rice or vegetables.
