  • 1 cup crushed graham crackers
  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine crushed graham crackers and melted butter; press into the bottom of each liner.
  3. Beat softened cream cheese until smooth; mix in granulated sugar. Add eggs one at a time, then vanilla extract and heavy cream.
  4. Pour filling over crusts until three-quarters full and bake for 20-25 minutes until set but slightly jiggly.
  5. Cool at room temperature, then refrigerate for at least four hours before serving. Just before serving, sprinkle brown sugar on top and caramelize with a kitchen torch.
