Description

Southwest Egg Rolls are the ultimate Tex-Mex appetizer, combining savory flavors and a satisfying crunch. These crispy, golden-brown rolls are filled with tender shredded chicken, black beans, sweet corn, and colorful bell peppers, making them a hit at any gathering.


Ingredients

  • 1 pound cooked boneless chicken breast
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • Large flour tortillas
  • Sour cream and salsa for dipping

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the shredded chicken, black beans, corn, diced bell peppers, cumin, chili powder, and salt.
  3. Place about two tablespoons of filling in the center of each tortilla. Fold in the sides and roll tightly.
  4. Arrange the egg rolls seam-side down on the prepared baking sheet. Lightly spray the tops with cooking spray.
  5. Bake for 20 minutes or until golden brown and crispy.
