  • 1 jalapeño pepper, chopped (seeds removed for milder flavor)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 avocado, sliced (optional)
  • 1/2 cup queso fresco or shredded cheese (optional)
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by chopping onions and jalapeños, mincing garlic, and draining tomatoes.
  2. In a skillet over medium heat, add olive oil and sauté onions until soft. Add garlic and jalapeño; cook until fragrant.
  3. Stir in the diced tomatoes with their juices; simmer for about 10 minutes until slightly thickened.
  4. In another skillet, heat oil over medium-high heat and fry each tortilla until golden brown and crispy.
  5. Crack eggs into the same pan used for the tortillas; cook until whites are set but yolks remain runny (about 2–3 minutes).
  6. Assemble by placing a tortilla on each plate, topping with the tomato mixture and an egg. Garnish with cilantro, avocado slices if desired, and a squeeze of lime juice.
