- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 can (15 oz) black beans, rinsed
- 1 cup sweet corn (frozen or canned)
- 1 can (14.5 oz) fire-roasted diced tomatoes with juice
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, finely diced
- 1 cup shredded cheddar cheese
- 2 tsp taco seasoning
- 1 cup low-sodium chicken broth
- ½ cup sour cream
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, sauté diced onion in oil until translucent. Add chicken pieces seasoned with salt; cook until no longer pink.
- Stir in black beans, corn, tomatoes, bell peppers, and taco seasoning; heat through.
- Layer half of the mixture in a greased 9×13-inch baking dish. Spread sour cream on top.
- Add remaining chicken mixture and top with shredded cheddar cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15–20 minutes until cheese is bubbly and golden.
