  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup sweet corn (frozen or canned)
  • 1 can (14.5 oz) fire-roasted diced tomatoes with juice
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, finely diced
  • 1 cup shredded cheddar cheese
  • 2 tsp taco seasoning
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté diced onion in oil until translucent. Add chicken pieces seasoned with salt; cook until no longer pink.
  3. Stir in black beans, corn, tomatoes, bell peppers, and taco seasoning; heat through.
  4. Layer half of the mixture in a greased 9×13-inch baking dish. Spread sour cream on top.
  5. Add remaining chicken mixture and top with shredded cheddar cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15–20 minutes until cheese is bubbly and golden.
