Instructions

  1. Grate zucchini and sweet potato; squeeze excess moisture using a clean dish towel.
  2. Sauté onion in olive oil over medium heat until translucent; add fresh herbs.
  3. In a mixing bowl, combine grated vegetables, sautéed onions, eggs, salt, pepper, and panko breadcrumbs; mix well.
  4. Form the mixture into patties about half an inch thick.
