- 1 cup cooked corned beef, finely chopped
- 1 cup shredded Swiss cheese
- 1 cup sauerkraut, drained and rinsed

Instructions
- In a bowl, combine the chopped corned beef, shredded Swiss cheese, sauerkraut, and green onions.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of filling near the corner closest to you.
- Fold that corner over the filling and tuck it tightly. Fold in the sides and continue rolling away from you until sealed with a dab of water.
- Heat enough vegetable oil in a deep skillet over medium-high heat until shimmering (about 350°F or 175°C).
- Fry egg rolls in batches until golden brown and crispy, approximately 3-4 minutes per side.
- Remove from oil and drain on paper towels. Serve immediately with dipping sauce.
