  • 1 teaspoon smoked paprika
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 8 corn tortillas
  • 1/2 cup crumbled queso fresco or shredded cheddar cheese (optional)

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Boil in salted water for about 15 minutes until fork-tender.
  2. Heat olive oil in a skillet over medium heat. Sauté the diced onion for 5–7 minutes until translucent.
  3. Stir in cumin and smoked paprika for about one minute until fragrant.
  4. Drain the potatoes and add them to the skillet, mashing slightly while mixing with onions.
  5. Warm corn tortillas in another skillet or over an open flame until pliable.
  6. Assemble tacos by filling each tortilla with the potato mixture, topping with cilantro, cheese (if using), and a squeeze of lime juice.
