Description

White Bean and Lemon Soup is a warm, comforting dish that combines the creamy texture of white beans with the zesty brightness of fresh lemons.   • 2 cans (15 oz each) great northern or cannellini beans, rinsed and drained
  • 2 fresh lemons (zest and juice)
  • 4 cups vegetable broth
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by rinsing and draining the beans, and finely chopping the onion and garlic.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft and fragrant.
  3. Pour in vegetable broth along with the rinsed beans. Stir to combine and let simmer for 10 minutes.
  4. Stir in lemon zest and juice; season with salt and pepper to taste.
  5. For a creamier texture, blend the soup using an immersion blender or in batches in a regular blender.
  6. Ladle soup into bowls; garnish with fresh herbs and an extra drizzle of olive oil before serving hot.
