  • 4 boneless, skinless chicken breasts
  • 8 oz Boursin cheese (garlic and fine herbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, then sear for about 5 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
  4. Lower the heat and stir in Boursin cheese and chicken broth until smooth.
  5. Return the chicken to the skillet, spooning the sauce over each breast. Sprinkle with thyme and parsley.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
