  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, finely chopped
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Stir in minced garlic, thyme, and bay leaf; cook until fragrant (about 1 minute).
  3. Add the drained white beans and vegetable broth; bring to a gentle boil.
  4. Reduce heat to low, cover partially, and simmer for 20–30 minutes to meld flavors.
  5. Just before serving, stir in fresh spinach or kale until wilted (3–5 minutes). Season with salt and pepper to taste.
