  • 4 ounces fresh ramen noodles

  • 1/2 cup sliced mushrooms
  • 2 green onions, chopped
  • 2 large eggs (for soft-boiled eggs)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic

Instructions

  1. In a large pot over medium heat, combine the chicken broth and miso paste until dissolved.
  2. Add minced ginger and garlic; cook for 1-2 minutes until fragrant.
  3. Stir in spinach and mushrooms; bring to a gentle simmer before adding ramen noodles. Cook noodles according to package instructions until tender.
