  • 3 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 cups salsa verde
  • 6 cups low-sodium vegetable broth
  • 1 cup long-grain white rice
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté chopped onions and garlic until soft.
  3. Add chicken breasts and pour vegetable broth over them until submerged. Simmer for about 20 minutes until cooked through.
  4. Remove chicken from the pot and shred into bite-sized pieces using two forks.
  5. Return shredded chicken to the pot along with salsa verde and rinsed rice. Stir well and cook until rice is tender, approximately 15-20 minutes.
  6. Just before serving, stir in lime juice and fresh cilantro.
