- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 2 tsp cumin
- 2 tsp chili powder
- 2–3 cups low-sodium vegetable broth
- 1 bell pepper, chopped
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and bell pepper; sauté until the onion is translucent (about 5 minutes).
- Add ground beef or turkey; cook until browned (7-10 minutes). Season with salt and pepper.
- Stir in minced garlic, cumin, and chili powder; cook for another minute until fragrant.
- Mix in pumpkin puree, diced tomatoes, and black beans; stir well.
- Pour in vegetable broth to cover all ingredients; bring to a boil then reduce heat to low. Simmer for about 30 minutes.
