  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Pat the beef cubes dry and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat. Sear beef until browned on all sides (about 3-4 minutes per side).
  3. Add onions and garlic to the skillet; sauté until fragrant (about 2-3 minutes). Deglaze with a splash of broth.
  4. Transfer meat mixture to the crockpot. Add potatoes, carrots, tomato paste, Worcestershire sauce, herbs, remaining broth, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Adjust seasoning if needed before serving with fresh parsley garnish.
