  • 1 lb ground beef
  • 1 lb ground pork
  • 4 cups fresh spinach (chopped)
  • 2 medium carrots (sliced thinly)
  • 1 medium onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 cup acini di pepe pasta
  • 8 cups low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, ground pork, breadcrumbs, minced garlic, parsley, egg, salt, and pepper. Roll into 1-inch meatballs.
  2. In a large pot over medium heat, sauté onions and carrots until softened (about 5 minutes).
  3. Pour in chicken broth and bring to a gentle boil. Add meatballs carefully.
  4. After simmering for 10 minutes or until meatballs are fully cooked, stir in spinach and acini di pepe pasta. Cook until pasta is tender (around 10 minutes).
