  • 2 lbs boneless, skinless turkey breast
  • 3 medium carrots, sliced
  • 2 medium Russet potatoes, diced
  • 2 stalks celery, chopped
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Chop turkey into bite-sized pieces and dice vegetables uniformly.
  2. In a skillet over medium heat, add 2 tbsp olive oil. Sauté onions and garlic until translucent (about 3-4 minutes).
  3. Transfer sautéed onions and garlic to the crockpot. Layer in turkey pieces, carrots, potatoes, celery, thyme, bay leaves, and pour chicken broth over.
  4. Cover and set on low for 6-8 hours until turkey is tender.
  5. Remove bay leaves, stir well, and season with salt or pepper as desired.
