  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh or frozen corn
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium Yukon gold potatoes, diced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup bell peppers, chopped

Instructions

  1. Prep ingredients by chopping onions, mincing garlic, and dicing potatoes.
