  • 34 boneless, skinless chicken breasts (1 lb)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups fresh spinach or kale
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop the carrots, celery, and garlic.
  2. In a large pot over medium heat, add olive oil and sauté garlic until fragrant. Add carrots and celery; cook until slightly softened.
  3. Add the chicken breasts to the pot along with the chopped vegetables. Pour in chicken broth until everything is submerged. Stir in thyme and bay leaves.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until chicken is cooked through.
  5. Remove chicken, shred it using two forks, and return it to the pot. Add tortellini and cook according to package instructions until al dente.
  6. Stir in spinach or kale during the last few minutes of cooking. Season with salt and pepper to taste.
