  • 4 cups low-sodium vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup unsweetened almond milk
  • 2 tsp fresh thyme
  • 2 tbsp fresh parsley
  • 2 tbsp olive oil

Instructions

  1. Chop the carrots, celery, onion, and mince the garlic.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent. Add garlic and cook for one minute.
  3. Pour in vegetable broth along with thyme and parsley; bring to a gentle boil.
  4. Whisk flour with almond milk until smooth, then stir into the pot to thicken for about five minutes.
  5. In a bowl, mix flour with baking powder, remaining almond milk, herbs, salt, and pepper until just combined.
  6. Drop spoonfuls of the dumpling batter into the boiling broth. Cover and simmer for about 15 minutes.
