  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream (or half-and-half)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, onion, garlic, salt, and pepper until well combined. Form into small meatballs (about 1 inch in diameter).
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches until golden on all sides. Remove and set aside.
  3. In the same pot, sauté chopped carrots and celery for about 5 minutes until softened.
  4. Pour in the beef broth while scraping any bits from the bottom of the pot. Stir in heavy cream for a rich texture.
  5. Return meatballs to the pot along with any juices accumulated. Simmer on low heat for about 20 minutes until flavors meld.
  6. Just before serving, stir in fresh dill and parsley for added freshness.
