  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Sauté onions until translucent (about 3-4 minutes), then add ground beef and minced garlic. Cook until browned.
  3. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes.
  4. In a greased baking dish, layer half of the zucchini slices followed by half of the meat mixture. Repeat layers.
  5. Top with mozzarella and cheddar cheese.
  6. Bake for 25-30 minutes until golden brown and bubbly.
