  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 medium carrots, thinly sliced
  • 4 green onions, chopped (plus extra for garnish)
  • 4 oz ramen noodles (fresh or dried)
  • 4 cups low-sodium chicken broth
  • ¼ cup low-sodium soy sauce
  • 1 tsp sesame oil
  • Soft-boiled eggs (optional for topping)

Instructions

  1. Prepare the vegetables by chopping garlic, ginger, carrots, and green onions.
  2. Place chicken breasts in the bottom of the crockpot and layer with garlic, ginger, carrots, and green onions (reserve some green onions for garnish).
  3. Pour in chicken broth along with soy sauce and sesame oil.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add ramen noodles to the pot and stir gently until cooked.
  6. Serve hot, garnished with extra green onions or soft-boiled eggs.
